As 2016 was winding down I felt like I was one of the only bloggers without a “Word for the Year,” Then, in the final hours, it came to me in the shower - only THE single-most inspiring space in my house. My word for 2017 is really two words: Open Doors. Ever since these words popped into my head and I claimed them as my own, it seems that doors have been flying open all over the place. Either that or I have more awareness of the opportunities before me.

Amazingly Delicious Coconut Oil Kettle Corn!
It’s Blue Friday for all Seahawk fans, and once again I’m coming to you with a new recipe that I’ll be linking to the Home of the 12’s Facebook page. If you are a fan and haven’t joined this fun group head on over to join. For those of you who don’t like football or who (Heaven forbid!) support opposing teams, this recipe is for you too, because we Seahawks fans are generous in spirit 🙂
Amazingly Delicious Coconut Oil Kettle Corn!
Notes
Be sure to keep the pot moving while popping the corn. With the added sugar it is trickier than regular popcorn and can burn very quickly.
Ingredients
- 1/4 cup coconut oil
- 1/2 cup popcorn kernels
- 1/4 cup unbleached pure cane sugar
- 1-1/4 teaspoon kosher salt
Instructions
- Heat the coconut oil in a large, heavy-bottomed pot over medium heat until it is sizzling.
- Add the popcorn kernels and sugar and stir.
- Place a lid on the pot and shake it continuously until all of the kernels have popped.
- Pour the popcorn into a large bowl and sprinkle with salt to taste
