As 2016 was winding down I felt like I was one of the only bloggers without a “Word for the Year,” Then, in the final hours, it came to me in the shower – only THE single-most inspiring space in my house. 12’s Chicken Bacon Mac ‘n Cheese
Hi readers! I’m so excited that the Seahawks have made it to the next round of the playoffs and are playing the Panthers in my home territory tomorrow. I’ve been wearing my Seahawks colors proudly and plan to put my great BIG 12th man flag out in the front yard for the game tomorrow. It will probably not even be noticed as this is more of a college ball town anyway.
So here is the official Recipe of the Week for the Home of the 12s Facebook page. This recipe is taken from Cooking Light Diet and goes along with my New Year’s resolution to lose a few pounds and get in shape. I don’t normally do a lot of recipes on this blog but have been kept hopping lately as the Seahawks just keep pushing on through. Let’s hope that I’ll be back with more next week!
Chicken Bacon Mac ‘n Cheese
Ingredients
- 6 oz. uncooked elbow macaroni
- 3 cups prechopped broccoli florets
- 3 bacon slices, chopped
- 12 oz. skinless, boneless chicken breasts, cut into 1/2-inch pieces
- 1 tsp. kosher salt, divided
- 1 Tbsp. minced fresh garlic
- 1/8 tsp. ground turmeric
- 1-1/4 cups 1% low-fat milk
- 1 cup unsalted chicken stock (such as Swanson)
- 1/4 cup plus 1 tsp. all-purpose flour
- 5 oz. sharp Cheddar cheese, shredded (about 1-1/4 cups)
Instructions
- Preheat broiler to high. Cook pasta according to package directions, omitting salt and fat. Add broccoli to pan during last 2 minutes of cooking. Drain.
- Cook bacon in a large ovenproof skillet over medium-high heat, stirring occasionally, 4 minutes or until browned. Remove bacon with a slotted spoon, reserve 1-1/2 tsp. drippings in skillet. Sprinkle chicken with 1/4 tsp. salt. Cook chicken in hot drippings 4 minutes. Sprinkle with garlic; cook, stirring occasionally, 2 minutes. Sprinkle with turmeric; cook, stirring often, 30 seconds.
- Whisk rogetehr milk, stock, four, and remaining salt; add to skillet. Bring to a boil, stirring often. Cook 2 minutes or until thickened. Stir in pasta mixture and 2 oz. cheese. Top with bacon and remaining cheese. Broil 2 minutes.

Pimento Cheese & Crab Nachos
This Sunday is the first playoff game for the Seattle Seahawks! Can you believe they made it after such a rough start to the season? Last week’s gameday recipe was a great big hit and the Hawks also had a great big win against the Cardinals, 36-6! Let’s hope this week’s official Home of the 12’s Recipe fuels the 12’s to cheer their team on to a victory against the Minnesota Vikings.

We first tasted these nachos in a restaurant in South Carolina and since then have been making our own. Be warned, this will be a popular dish and the first to disappear!
Ingredients
- 1-1/2 C. mayonnaise
- 1 4 oz. jar diced pimento, drained
- 1 tsp. Worcestershire sauce
- 1 tsp. finely grated onion
- 1/4 tsp. ground red pepper
- 1 8 oz. block extra-sharp Cheddar cheese, finely shredded
- 1 8 oz. block sharp Cheddar cheese, medium shred
- 1 lb. fresh lump crab meat
- Tortilla chips
Instructions
- Preheat oven to 350 degrees
- Mix first 5 ingredients together in a large bowl
- Stir in the cheese and the crab
- Heat in oven for 20-25 minutes until the cheese is mostly melted and beginning to bubble around the edges
- While cheese and crab mixture is heating arrange tortilla chips in the bottom of a large flat serving dish
- When heated through, remove cheese mixture from oven and carefully spoon over tortilla chips.

Family Favorite Sausage Bean Chowder
Okay y’all, I just might be risking family harmony today by sharing this favorite family recipe to cook on a chilly football kinda’ day. It is well worth the risk though if it helps the Seahawks win tomorrow against their old foes the Arizona Cardinals!

Home of the 12's Sausage Bean Chowder

Ingredients
- 1 pound ground Italian sausage (hot or regular)
- 1 large sweet onion, chopped
- 1 quart water
- 2 - 27 oz. cans kidney beans, drained
- 30 oz. tomato sauce or crushed tomatoes
- 2 cloves garlic, minced
- 1-1/2 t. Johnny's Seasoning Salt
- 1 bay leaf
- 2-3 T. Italian herb seasoning
- 2 large red potatoes, cubed
- 1 green pepper, diced
Instructions
- Brown ground Italian sausage in large soup pan.
- Drain fat from sausage.
- To pan, add chopped onion, water, drained kidney beans, tomatoes, minced garlic, season salt, bay leaf and Italian seasoning.
- Bring to a boil then simmer for 1 hour.
- Add cut potatoes and green pepper and simmer until potatoes are tender, about 15 minutes.

Festive Layered Greek Dip
Another Sunday is coming and another day of great football. This is the official Game Day Recipe of the Week for the Home of the 12s Facebook page. It’s all about those Seahawks boss!
Festive Layered Greek Dip

This is a healthy and delicious snack for Game Day but also so festive that it would make a great holiday appetizer as well. I like to double it for larger crowds as it is very popular and good to the last scoop!
Ingredients
- 8 oz. package cream cheese, softened
- 1 T. lemon juice
- 1 t. dried Italian seasoning
- 3 cloves garlic, minced
- 1-1/2 C. prepared hummus
- 1 C. cucumber, chopped
- 1 C. cherry tomatoes, sliced
- 1/2 C. Kalamata olives, pitted and chopped
- 1/2 C. feta cheese, crumbled
- 1/3 C. green onions, sliced
- Pita chips for dipping
Instructions
- In a medium mixing bowl beat cream cheese, lemon joice, Italian seasoning and garlic with electric mixer on medium until smooth and combined.
- Spread cream cheese mixture in deep 9 inch pie plate or shallow serving dish
- Evenly spread hummus over cream cheese layer
- Top with cucumber, tomato, olives, feta cheese, and green onions, in that order.
