Another Sunday is coming and another day of great football.  This is the official Game Day Recipe of the Week for the Home of the 12s Facebook page.  It’s all about those Seahawks boss!

Serve with pita chips or crackers of your choice.

Festive Layered Greek Dip

Notes

This is a healthy and delicious snack for Game Day but also so festive that it would make a great holiday appetizer as well. I like to double it for larger crowds as it is very popular and good to the last scoop!

Ingredients

  • 8 oz. package cream cheese, softened
  • 1 T. lemon juice
  • 1 t. dried Italian seasoning
  • 3 cloves garlic, minced
  • 1-1/2 C. prepared hummus
  • 1 C. cucumber, chopped
  • 1 C. cherry tomatoes, sliced
  • 1/2 C. Kalamata olives, pitted and chopped
  • 1/2 C. feta cheese, crumbled
  • 1/3 C. green onions, sliced
  • Pita chips for dipping

Instructions

  1. In a medium mixing bowl beat cream cheese, lemon joice, Italian seasoning and garlic with electric mixer on medium until smooth and combined.
  2. Spread cream cheese mixture in deep 9 inch pie plate or shallow serving dish
  3. Evenly spread hummus over cream cheese layer
  4. Top with cucumber, tomato, olives, feta cheese, and green onions, in that order.

Cold Day Kingdome Minestrone

I have another favorite recipe for you this week that I’ll also be sharing over at the Home of the 12s Facebook page.  This Kingdome Minestrone is named in honor of the Seahawk’s original stadium where we enjoyed many games over the years.  My dad had season tickets from the start of the franchise and he LOVED his SEAHAWKS.

Kingdome Minestrone is especially delicious because of the addition of the Parmesan rind and the tomato pesto. This one is a FIVE-Star hit even with my meat lovin' husband. Of course, some hot Italian sausage wouldn't be a bad addition either.

This makes a large pot of soup which means plenty of leftovers for tomorrow!
Kingdome Minestrone

Ingredients

  • 2 cans (14.5 oz) diced tomatoes
  • 2 T. tomato paste
  • 1/4 C. sun-dried tomato pesto
  • 1 parmesan rind
  • 3 cans beef stock + water to equal 6 cups
  • 1 cup carrots, diced
  • 1-1/4 C. celery, diced
  • 1-1/2 C. onion, diced
  • 5 cloves garlic, minced
  • 1 t. dried oregano
  • 1/2 t. dried rosemary
  • 2 bay leaves
  • sea salt and pepper to taste
  • 1 - 15 oz. can red kidney beans, drained
  • 1 - 15 oz. can great northern beans, drained
  • 2 C. zucchini, diced
  • 1-1/2 C. tubular pasta
  • 1 C. frozen green beans, thawed
  • 2-1/2 C. baby spinach
  • Finely shredded parmesan
  • Finely shredded prosciutto

Instructions

  1. Place diced tomatoes, tomato paste, tomato pesto, Parmesan rind, beef stock, water, carrots, celery, onion, garlic, oregano, rosemary, and bay leaves in slow cooker. Season with salt and pepper to taste. Cook on low heat 6-8 hours or high heat 3-4 hours.
  2. Add kidney beans, great northern beans, zucchini, and pasta and cook on high heat for an additional 20-30 minutes or until pasta is tender. Stir in spinach and green beans and cook for an additional 5 minutes. Serve in soup bowls and top with parmesan and shredded prosciutto.

Amazingly Delicious Coconut Oil Kettle Corn!

It’s Blue Friday for all Seahawk fans, and once again I’m coming to you with a new recipe that I’ll be linking to the Home of the 12’s Facebook page.  If you are a fan and haven’t joined this fun group head on over to join.  For those of you who don’t like football or who (Heaven forbid!) support opposing teams, this recipe is for you too, because we Seahawks fans are generous in spirit 🙂

Warning: This is the best kettle corn I've ever tasted but also, highly addictive!
Amazingly Delicious Coconut Oil Kettle Corn!

Notes

Be sure to keep the pot moving while popping the corn. With the added sugar it is trickier than regular popcorn and can burn very quickly.

Ingredients

  • 1/4 cup coconut oil
  • 1/2 cup popcorn kernels
  • 1/4 cup unbleached pure cane sugar
  • 1-1/4 teaspoon kosher salt

Instructions

  1. Heat the coconut oil in a large, heavy-bottomed pot over medium heat until it is sizzling.
  2. Add the popcorn kernels and sugar and stir.
  3. Place a lid on the pot and shake it continuously until all of the kernels have popped.
  4. Pour the popcorn into a large bowl and sprinkle with salt to taste

Turkey Stuffing Dumpling Soup

Did y’all have a great Thanksgiving?  I sure do hope so.  I also hope that you saved some leftovers for today’s Home of the 12’s Recipe of the Week, Turkey Stuffing Dumpling Soup.

I can’t remember where we found this recipe (if anyone knows please message me so I can give them credit) but it is super easy and SO delicious!

Turkey Stuffing Dumpling Soup

Everything you need for a full meal is in this soup but it might be nice to serve with a dinner salad and pumpkin pie for dessert of course.

Ingredients

  • 1-1/2 C. fresh mushrooms, sliced
  • 1 medium sweet onion, chopped
  • 2 T. extra virgin olive oil
  • 3+ cloves garlic, minced
  • 6 C. Swanson's chicken broth
  • 1-1/2 C. fresh carrots, sliced
  • 1-1/2 C. fresh green beans, cut in one inch pieces
  • 2 C. cooked turkey, cut into bite-sized pieced
  • 1/4 t. salt
  • 1 t. Hungarian paprika
  • 1/8 t. ground cumin
  • 1/8 t. dried thyme
  • 2 eggs
  • 1/2 C. all-purpose flour
  • 2 C. cooked stuffing
  • A splash of hot sauce to taste (optional)

Instructions

  1. In a Dutch oven or large deep pan, saute' mushrooms and onion in oil over medium heat until tender.
  2. Add garlic and cook one minute longer.
  3. Add broth, carrots, green beans, and seasonings.
  4. Bring to boil, then reduce heat and simmer uncovered for 10 minutes or until vegetables are tender.
  5. Add cooked turkey.
  6. Meanwhile . . . in large bowl whisk eggs and flour together until smooth.
  7. Crumble cooked stuffing into dough and mix well.
  8. If dough is dry, add water 1 t. at a time to moisten until mixture holds shape.
  9. Drop stuffing mixture by heaping tablespoons into simmering soup (I find it helpful to moisten my hands often with water to keep the dough from sticking them).
  10. Cover and simmer for 10 minutes or until toothpick inserted into dumpling comes out clean (do not lift cover while dumplings are cooking).
  11. Remove from heat and serve.

Home of the 12’s Hartstene Island Dip

Here it is, just in time for Blue Friday, the Game of the Week Recipe for the Home of the 12’s Facebook page (the 12’s are Seahawks fans for any of those who don’t know).

In honor of the game on Sunday against the Forty-whiners, oops excuse me, that’s the Forty-niners, we are sharing our recipe for this cheesy bean dip to go along with the whine.

Home of the 12’s Hartstene Island Dip

This recipe is named for Hartstene Island in the Puget Sound as it was created there on one of our family's trips to my cousin's island cabin. It has been a family favorite ever since!

40 minutes
Home of the 12’s Hartstene Island Dip

Notes

Serve as a dip for tortilla chips and raw vegetables.

Ingredients

  • 1 15-1/2 ounce can refried beans
  • 1 package taco seasoning
  • 1 pound cheddar cheese, grated
  • 1/2 pound Jack cheeses, grated
  • 6 oz. cream cheese
  • 1 cup sour cream
  • 1 large sweet onion, chopped

Instructions

  1. Place all ingredients together in a large oven safe casserole and mix slightly.
  2. Bake in 350 degree oven for 1/2 hour..
  3. Mix thoroughly to blend melted ingredients and continue cooking until the dip mixture is heated through and bubbling around the edges, approximately 10-15 additional minutes.
