Pimento Cheese & Crab Nachos

This Sunday is the first playoff game for the Seattle Seahawks! Can you believe they made it after such a rough start to the season?  Last week’s gameday recipe was a great big hit and the Hawks also had a great big win against the Cardinals, 36-6!  Let’s hope this week’s official Home of the 12’s Recipe fuels the 12’s to cheer their team on to a victory against the Minnesota Vikings.

Pimento Cheese & Crab Nachos

Pimento Cheese & Crab Nachos

Notes

We first tasted these nachos in a restaurant in South Carolina and since then have been making our own. Be warned, this will be a popular dish and the first to disappear!

Ingredients

  • 1-1/2 C. mayonnaise
  • 1 4 oz. jar diced pimento, drained
  • 1 tsp. Worcestershire sauce
  • 1 tsp. finely grated onion
  • 1/4 tsp. ground red pepper
  • 1 8 oz. block extra-sharp Cheddar cheese, finely shredded
  • 1 8 oz. block sharp Cheddar cheese, medium shred
  • 1 lb. fresh lump crab meat
  • Tortilla chips

Instructions

  • Preheat oven to 350 degrees
  • Mix first 5 ingredients together in a large bowl
  • Stir in the cheese and the crab
  • Heat in oven for 20-25 minutes until the cheese is mostly melted and beginning to bubble around the edges
  • While cheese and crab mixture is heating arrange tortilla chips in the bottom of a large flat serving dish
  • When heated through, remove cheese mixture from oven and carefully spoon over tortilla chips.

    SEA HAWKS! SEA HAWKS! I wasn’t going to check out your recipe until I saw my beloved Hawk …. and this is from a girl who grew up in ST. Paul, Minnesota! Nail biter last Sunday, wasn’t it?! I’m all ready for this Sunday … but torn if I should wear my Panthers shirt under my Seahawks jersey …. Charlotte still has a hold on my heart, so it’s kind of a win-win for our family. Will have to save your dip recipe for the Super Bowl. It looks yummy. Thanks for sharing! Cynthia

    Haha!! My husband actually does like the Vikings… and the Broncos… and the Colts. But we have lived mostly in Lion and Bills territory… totally disappointing teams. 😉
