Hi readers!  I’m so excited that the Seahawks have made it to the next round of the playoffs and are playing the Panthers in my home territory tomorrow.  I’ve been wearing my Seahawks colors proudly and plan to put my great BIG 12th man flag out in the front yard for the game tomorrow.  It will probably not even be noticed as this is more of a college ball town anyway. 

So here is the official Recipe of the Week for the Home of the 12s Facebook page.  This recipe is taken from Cooking Light Diet and goes along with my New Year’s resolution to lose a few pounds and get in shape. I don’t normally do a lot of recipes on this blog but have been kept hopping lately as the Seahawks just keep pushing on through.  Let’s hope that I’ll be back with more next week!

Chicken Bacon Mac ‘n Cheese

This recipe is taken from the Cooking Light Diet at www.diet.cookinglight/southernjan. It has all of the flavor of a high calorie dish, lightened up with fewer calories.

1-1/3 cups per serving
Chicken Bacon Mac ‘n Cheese

Ingredients

  • 6 oz. uncooked elbow macaroni
  • 3 cups prechopped broccoli florets
  • 3 bacon slices, chopped
  • 12 oz. skinless, boneless chicken breasts, cut into 1/2-inch pieces
  • 1 tsp. kosher salt, divided
  • 1 Tbsp. minced fresh garlic
  • 1/8 tsp. ground turmeric
  • 1-1/4 cups 1% low-fat milk
  • 1 cup unsalted chicken stock (such as Swanson)
  • 1/4 cup plus 1 tsp. all-purpose flour
  • 5 oz. sharp Cheddar cheese, shredded (about 1-1/4 cups)

Instructions

  1. Preheat broiler to high. Cook pasta according to package directions, omitting salt and fat. Add broccoli to pan during last 2 minutes of cooking. Drain.
  2. Cook bacon in a large ovenproof skillet over medium-high heat, stirring occasionally, 4 minutes or until browned. Remove bacon with a slotted spoon, reserve 1-1/2 tsp. drippings in skillet. Sprinkle chicken with 1/4 tsp. salt. Cook chicken in hot drippings 4 minutes. Sprinkle with garlic; cook, stirring occasionally, 2 minutes. Sprinkle with turmeric; cook, stirring often, 30 seconds.
  3. Whisk rogetehr milk, stock, four, and remaining salt; add to skillet. Bring to a boil, stirring often. Cook 2 minutes or until thickened. Stir in pasta mixture and 2 oz. cheese. Top with bacon and remaining cheese. Broil 2 minutes.

    Talk about serendipity, Patti (at least that’s what I’d call it) – first, your home team will be playing in your new home state! Second, I was actually on my walk with my husband this morning, thinking of replicating Applebee’s bacon mac & cheese with honey pepper chicken. Your recipe shared today will be pinned as an even better substitute (no coating on the chicken) – it looks delish! Have a great weekend, and go Hawks!

    This recipe really is a new twist on Mac n Cheese, Patti! I know turmeric is good for you, but I would never have thought to add it to a dish like this. Did you love it? It’s looks deeelish!

“In 1965, Charles Schulz, a devout Christian and “In 1965, Charles Schulz, a devout Christian and creator of the Peanuts comic strip, was asked to create a Christmas special for CBS featuring the Peanuts Characters. He agreed with one requirement, that they allow him to include the story of the birth of Jesus. Although the stations executives were hesitant and tried to convince him otherwise, Schulz was insistent. As a result, for the past 50 plus years, millions of people have watched “A Charlie Brown Christmas” and heard the story of Jesus and “what Christmas is all about.”

It wasn’t until a few years back that I realized a “hidden message” in the film. Linus, a child who seems to have some insecurities as he carries a security blanket with him at all times. In fact, Linus NEVER drops his blanket, except once....

While sharing the message of “what Christmas is all about,” Linus drops his blanket at the exact moment he says the words, “fear not!”

In this seemingly innocent moment, Linus delivers a powerful reminder of the true meaning of Christmas. We are to “fear not”, for Jesus is born. We needn’t rely on material things for security, we have God with us, “Immanuel”, (Matthew 1:23) Jesus Christ, our Lord and Savior - the true meaning of Christmas.

Awhile back, someone informed me, indignantly so, that Linus picks up his blanket at the end of the speech so my interpretation must be wrong. Well, he was right, Linus does pick up his blanket at the end of his speech. However, he “drops” it again later... 

Amid big, bright, colorful, shiny artificial trees, Charlie Brown chose the least of these, a little, wooden tree with just a few branches. Shortly thereafter, Linus uses his blanket to wrap about the base of the tree and says, “Maybe it just needs a little love”. In that moment, the tree “awakens”, stands tall and firm. A reminder that no matter who we are, how many mistakes we’ve made, a “little love” can make all the difference.

Let’s strive to “fear not” (Luke 2:10) and “love one another” (John 13:34), not just at Christmastime, but the whole year through.”
