The warmer weather is coming.  I believe it is.  Any day now I’ll be stashing my boots in the back of my closet and pulling out my flip flops.  That’s when I’ll start cooking all of my lighter Spring and Summer recipes. But until then, a good dose of comfort food on a chilly night is always in order.  This Spaghetti Sauce recipe (sort of) came from a family friend many years ago.  I say “sort of” because grandpa Umbinetti didn’t really have a recipe written down, but he showed me how he made his killer spaghetti sauce while I looked on and took fast and furious notes.

My sauce has never tasted exactly like his but after a bit of tweaking I’ve gotten it to taste as much like his as a Finnish/Irish girl could and it has become a family favorite!

This recipe isn't an exact science and I usually adjust it to taste after it has simmered awhile. If I add anything it is usually a touch more tobasco or worcestershire sauce. Make it yours and enjoy with a green salad and garlic bread on the side!

Old Things New Family Spaghetti Sauce

Notes

This recipe makes a huge pot of spaghetti sauce and is great for a crowd. If I make it just for the family I let it cool and place it in zip lock bags and freeze for future meals.

Ingredients

  • 1 pound lean ground beef
  • 1 pound hot Italian sausage
  • Olive oil
  • 1/2 pound mushrooms, sliced
  • 2 medium onions, chopped
  • 1 large green pepper, chopped
  • 3 stalks celery, chopped
  • 6+ cloves garlic
  • 3 - 28 ounce cans crushed tomatoes
  • 12 ounce can tomato paste
  • 2 cups finely grated parmesan cheese
  • 1/4 C. Italian herb seasoning
  • 1 teaspoon dried basil
  • 2 teaspoons+ sugar (to taste)
  • 2 teaspoons salt
  • 3/4 teaspoon pepper
  • 1 cup parsley, chopped
  • 2-3 dashes worcestershire sauce
  • 6 dashes tobasco sauce
  • 2 cups red wine - OR - for an alcohol free version, 2 cups tomato juice with just enough dark balsamic vinegar (1-2 tsps.) added to give it a "bite".

Instructions

  1. In 8 qt. pan cook ground beef and sausage over medium-high heat until browned. With a slotted spoon remove meat to bowl.
  2. In drippings, over medium heat, cook mushrooms, onion, garlic, green pepper and celery until tender. Add olive oil if needed.
  3. Return meat to pan.
  4. Add tomatoes and paste, parmesan and all other seasonings.
  5. Bring to a boil, cover and simmer for two hours.
  6. Adjust seasonings to taste.
